How vegan friendly is the UK countryside?

Hello, vegan from Sweden here. My wife and I plan to travel the UK by car this summer to see some gardens which will take us to some real rural places. I guess this varies but will we ba able to eat outside of large cities or will we be stuck with eating blocks of raw tofu from a store? Are there any restaurants that we shouldn't miss?

Also, if anyone know of any good gardens or walking trails/nature experiences around the UK I would love to hear. We are especially fond of cottagecore and arts and crafts and like everything naturerelated.

Thanks for any and all input!

Edit: We'll start our way from Sissinghurst/London and work our way north towards Glasgow via Wales and the west coast. On our way back south we plan to go by the east coast. Were open for changes tho.
