What Star Wars Jedi Fallen Order difficulty level matches Dark Souls 1?

I've played and completed the 1st Dark Souls, now I'm looking for another (albeit a bit less difficult) challenge, and I've read in several places that Fallen Order could be a good "soulslike" for beginners.

I've also read that it has 4 difficulty levels and that the "Jedi Master"/3rd difficulty is the developer's intended one but I'm kinda scared it'll be too easy when compared to Dark Souls 1.

So what difficulty level should I choose if I don't want a too easy experience (compared to DS1) but still don't want it to be harder?

How does the hardest difficulty level "Jedi Grandmaster" compare to Dark souls 1? Also how does "Jedi Master" compare to it? the rest of difficulty levels I assume they are not relevant, maybe? (to a DS1 player I mean)
