New to hot sauce making

Heya folks, I’m fairly new to hot sauce making, know the PH and all that, I’m more looking for info on adding things.

I’ve made a couple ghost pepper hot sauces (mango ghost pepper ftw), and was looking to make a blueberry habanero sauce. I was looking for a good primer on how much blueberries to add.. like say 10habs (100g or so) to X g’s of blueberries.
